Fresh Produce

For the past several weeks I have been putting up locally grown fresh produce to store for winter. I ran across this beautiful photo mosaic on Flickr put together by lelisa.

I love the colors and textures in the shots she chose for this mosaic. Makes me hungry and it also makes me curious. I had never seen Japanese eggplant before. I wonder how it tastes.

    What goodies are you canning up...tomatoes?
    I have to dig out my small batch canning book and get myself moving!

  2. So far corn, tomatoes, beans, squash and I am drying herbs. My favirite herb is basil and I want to try growing it in my kitchen window for fresh year round.
    I blanch and freeze the corn and beans in vacuum seal freezer bags.
